Strawberry Cream Cheese Bread

We're having a brunch tomorrow at work to start the summer off so I tried a new recipe. I tasted a little sample and it was yummy!!

1/2 cup butter, softened
1 cup sugar
4 ounces cream cheese, softened
2 eggs
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Kosher salt
1/2 cup buttermilk
1 1/2 cup strawberries (rinsed, dried, and chopped)


  • Preheat the oven to 350 degrees. 
  • Grease a 9 x 5 inch glass dish. 
  • Using an electric mixer, cream the butter, sugar, and cream cheese until fluffy. Add the eggs one at a time. Add the vanilla extract and set aside. 
  • In a separate bowl, mix the flour, baking powder, baking soda, and kosher salt. 
  • Blend flour mixture with butter mixture. 
  • Add buttermilk and stir, but do not over mix. 
  • Carefully fold in the strawberries. Note: the dough should be very thick. 
  • Bake for about an hour. Note: after 30 minutes I had to put foil on top so the top wouldn't burn.
