Buckeyes




Ingredients

1/2 cup peanut butter
1 stick butter
1 tsp vanilla
1/2 tsp salt
4 cups powdered sugar
2 cups semi-sweet chocolate chips
2 tbsp shortening

Directions

  1. Mix the peanut butter, butter, vanilla, salt, and powdered sugar. If the mixture is to dry, add more peanut butter. If the mixture is to moist, add more powdered sugar.
  2. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  3. Press a toothpick into each ball.
  4. Chill in the freezer until firm, about 30 minutes. 
  5. Melt the semi-sweet chocolate chips and the shortening in a small microwavable bowl. 
  6. Dip the peanut butter balls in the chocolate by holding onto the toothpick. 
  7. Put back on the cookie sheet, remove the toothpicks, and refrigerate until serving.
