Mint Chocolate Brownies



Brownie Cake Layer

2 cups butter (melted)
3/4 cup cocoa
2 1/4 cup sugar
6 eggs
2 cups flour
1/8 tsp salt
2 tsp vanilla

Combine the butter, cocoa, sugar, and eggs. Set aside. In a separate bowl mix the flour, salt, and vanilla. Add the flour mixture to the butter/sugar mixture. Grease two 9 x 13 inch metal pans. Pour the batter into the pans and bake at 350 for 8-10 minutes. Allow the brownies to cool completely before adding the mint cream layer.

Mint Cream Layer

4 cups powdered sugar
1 cup butter
2 tbsp water
2 tsp mint extract
6-8 drops of green food coloring

Beat until smooth.

Topping

12 Tbsp butter
2 cups Hershey's semi-sweet choc. chips.

Melt and pour on top of the mint cream layer. Refrigerate until ready to serve.
